      Processed cheeses

      Production of Sirobogatov processed cheese uses natural fillings: meat, dried mushrooms, Maasdam cheese extract.

      Traditional pasteurization is used in production: the melting temperature of 75-80 degrees Celsius kills harmful bacteria while preserving the beneficial properties of cheese.

      This gentle processing makes it possible to preserve the real taste of cheese without adding flavoring and keep the product “alive”; the shelf life, as with all natural products, is no more than six months.

      The main ingredients in Sirobogatov processed cheeses are top-quality hard cheese, quark, butter and cream. It is this composition that lends our product its creamy taste that traditionally appeals to Russian consumers.

      To obtain the needed plasticky-viscous texture, we use the natural stabilizer: cottage cheese. In production we use almost no casein (dry milk protein), which differentiates our cheeses from those of our main rivals

      Pasta bake with cheese and tomatoes

      Serves 4
      45 minutes

      We will need:

      Paste
      600g
      Garlic
      2 cloves
      Black peppercorns
      20 pcs
      TM Sirobogatov hard cheese
      200g
      Cherry Tomatoes
      10 pcs
      Mayonnaise
      300g

      Instruction:

      1. Cook the pasta until half cooked.
      2. Grease a baking dish with oil. Put boiled pasta in it and cherry tomatoes cut in half on top.
      3. Grate the cheese. Sprinkle the pasta with grated cheese and pepper.
      4. Cut the garlic into large pieces and place it on top.
      5. Lubricate the surface with a thin layer of mayonnaise and bake in the oven for 10-20 minutes at 180-190 C until cooked.
      6. Decorate the finished dish with herbs.

      Cheese soup with seafood

      Serves 4
      45 minutes

      We will need:

      Processed cheese “Druzhba” TM Sirobogatov
      4 x 80g cheese
      Potato
      4 pcs
      Onion
      1 pc
      Carrot
      1 pc
      Vegetable oil
      80 ml
      Shrimp
      500g
      Salt
      To taste
      Black pepper
      To taste
      Green
      To taste
      Bay leaf
      1 pc

      Instruction:

      1. Pour boiling water over frozen shrimp, let them brew for 4 minutes. Then throw them into a colander. Remove the tails, leaving a couple intact for decoration. Cut the rest of the shrimp.
      2. Wash and peel carrots, onions and potatoes. Grate the carrots and cut the other vegetables into cubes. Boil 2 liters of water, add salt, bay leaf and potatoes. Boil for 15 minutes over low heat.
      3. In a frying pan, sauté the onion in oil until translucent. Add carrots, cook for another 10 minutes.
      4. Break the cheese into pieces, put it in a saucepan. Pour half a glass of boiling water, cook until the cheese completely dissolved, stirring it with a spoon. Add this mass to the two liters of boiling water with browned vegetables.
      5. Now add the shrimp, minced garlic and chopped herbs. Once the soup starts boiling, turn it off. Let it brew for 15 minutes. Serve garnished with tailed shrimp.

      Stuffed peppers with cheese

      Serves 4
      2 hours

      We will need:

      bell pepper
      4 pcs
      Garlic
      1 tooth
      Olive oil
      1 tsp
      Sirobogatov Parmesan Cheese
      50g
      Bow
      1 piece
      Fietta Cheese
      400g
      Dill
      To taste
      Cilant
      To taste
      Red wine vinegar
      ½ tsp
      Freshly ground black pepper
      To taste

      Instruction:

      1. Wash the peppers, cut them in half, remove seeds and membranes. The tails can be left for aesthetic purposes; the boats of the peppers will also be healthier and the filling will not flow out.
      2. Cut the Fiett” cheese into small cubes. Salt a little.
      3. Grind the garlic, chop the greens. Chop the onion and fry in olive oil. Optionally, you can add other herbs: oregano, basil, fennel. Add vinegar and black pepper. The filling should not be too dry, but not liquid either.
      4. Mix thoroughly and stuff the peppers fully. When heated, the filling will decrease in volume, so you can stuff them with a small slide. Put the peppers in a baking dish.
      5. Preheat the oven to 180-200 C and bake the peppers for about 20 minutes. During this time, the filling will melt, a little liquid may leak out; this is fine.
      6. Grate hard cheese on a fine grater and sprinkle the peppers with it. Send the peppers to the oven for another 5-7 minutes, or, even better, grill them until there’s a beautiful golden crust.
      7. Stuffed peppers are best served hot. If you don’t eat all the peppers in the next 5-10 minutes, they will remain very tasty even when cooled. However, the filling will harden and become dense.

      Spicy cheese biscuits

      Serves 4
      30 minutes

      We will need:

      Coriander Seeds
      1 tbsp
      Cumin
      1 tbsp
      Sesame
      1 tbsp
      Poppy
      1 tbsp
      Premium Bread Flour
      150g
      TM Sirobogatov Butter
      90g
      Cheese “Parmesan” ТМ Sirobogatov
      140g
      Heavy Cream
      40ml
      Egg Yolk
      1 pc
      Soda
      1 pinch

      Instruction:

      1. Grate cheese on a coarse grater.
      2. Sift flour mixed with soda powder into a deep bowl.
      3. Cut the softened butter into cubes.
      4. Pour cream into a bowl with the flour, add cheese and butter. Knead the plasticky dough.
      5. Using a rolling pin, roll out the dough into a 0.5 cm thick layer. Cut out the cookies with a special cookie cutter; you should get 20-25 pieces. Lubricate each preform with fork-whipped yolk. Sprinkle generously with spices. You can choose spices according to your taste.
      6. Bake cheese cookies in a hot oven up to 175 C for 10-12 minutes.
      7. Once the cookies are golden, take them out of the oven and you’re done!
      8. Wait until it cools completely and only then put the cookies in the bowl and serve.

      Sausage cheese is a processed cheese made using special technology.

      The foundation of the Sirobogatov sausage cheese are hard and semi-hard cheeses and butter. We add small pieces of ham to the “With Ham” cheese. Our cheese is authentically smoked on alder chips.

      Like any other type of cheese, sausage cheese contains beneficial vitamins and microelements. It is delicious on its own, as an appetizer, and in sandwiches. Good for salad and perfect for baking.

      Brined cheeses

      Brined cheeses are cheeses that are matured and stored in brine, are up to 7% salt, and have no crust. These cheeses are rich in vitamins and microelements and contain large amounts of folic acid and organic amino acids. The Sirobogatov brined cheeses are naturally smoked on wood chips without the addition of liquid smoke. The vacuum packaging does a great job preserving the cheese and prevents the entry of external microorganisms.

      These cheeses are good as appetizers and snacks or as an element of a larger dish.

      Fietta is an analogue of the famous Feta cheese, as close as possible to the source in composition, taste and structure.

      Fietta is a processed product in which animal fats are partially replaced with vegetable fats, which owes to the technology of temperature treatment and is meant to preserve the cheese’s elastic shape in salad.

      Ingredients in a product’s composition are never listed randomly. There’s a rule: the first to be listed are the main ingredients, as their share of the overall volume is the biggest. This is why Fietta deserves attention: in its composition, the natural components come first!

      In the production of processed cheese “Sirobogatov” natural fillers are used: meat, dried champignons, extract from Maazdam cheese.

      Production of quark cheese uses natural quark made by our special order.

      This quark has a specific delicate structure (no granules; the structure is whipped) and lacks the acidity characteristic of all types of quark.

      The gentle temperature treatment (around 75 degrees) lets us preserve the beneficial properties and tenderness of quark.

      Natural fillings: real frayed fig, pears and dried herbs.

      Natural ingredients ― carrageenan, seaweed, carob juice ― are used as stabilizer to lend the cheese an elastic structure.

      Tan and Ayran, often produced using similar technology, are soft fermented milk drinks diluted with water that can also be used when cooking various dishes. Tan is different from ayran due to the presence of a saline solution.

      Tan and Ayran increase muscle activity, facilitate weight loss, inhibit the activity of harmful intestinal bacteria, cleanse the intestines and restore their microflora, helping the body fight many harmful bacteria on its own.

      These fermented milk drinks are considered one of the secrets of the long-livers of the Caucasus, who daily consume natural fermented milk products made from fresh milk and sourdough.
